Fred Savart spends most of his life in the vineyards, working the soil and looking after his vines. He adopts an ideal of preventing diseases and pests rather than combating them after they have hit his vineyards, so he encourages a diverse ecosystem to exist.
Once the harvest is collected, he keeps his influence in the cellar as little as possible. He barrel ferments his still wine (except for L'Ouverture) which gives a delicious richness, but still with vibrancy and minerality. These are some of the best Champagnes I've been fortunate to sample, and offer outstanding value for money.
